SAN ANTONIO – North East ISD's enchilada recipe is making waves overseas after being served at a school in Sweden.
"I saw this YouTube video and I got hungry and thought, I have to make it because it looks like fun," says Chef Michael Bäckman.
Bäckman is the principal of a primary school more than 5,000 kilometers from the sea – in Flemingsberg, a suburb of Stockholm, Sweden. After finding a recipe on a Facebook group called School Lunch Tips That Rock, she decided she had to make it for her students.
